    This salsa goes well with many other foods; try it with grilled fish and shrimp, pheasant or grouse breast, even venison chops.

    The salsa may be made hotter with the addition of more Tabasco or by adding any chopped fresh chile pepper.

    Serve over rice, accompanied with a mixture of sautéed mushrooms and snow peas.

    Serves 2

    1 cup chopped red onion (about 1 medium onion)
    1 1/4 cups diced mango (about 1 mango)
    1 1/4 cups diced fresh peach (about 2 peaches)
    1/2 cup stemmed and finely chopped fresh cilantro
    3 scallions, cleaned and chopped, including all but 1 inch of greens
    1/4 cup lime juice
    2 tablespoons tamari or low-sodium soy sauce
    1 tablespoon extra-virgin olive oil
    1/2 teaspoon Tabasco
    1 tablespoon ground cumin
    4 quail
    1 lime, cut into wedges

    1.Combine the red onion, mango, peach, cilantro, scallions, lime juice, tamari, olive oil, Tabasco, and cumin in a medium bowl. Mix well and set aside, un-refrigerated, for about 1 hour.
    2.Light a fire in a charcoal grill.
    3.Wash the quail and pat dry. With scissors or a knife, cut up the back and flatten the birds with the back of a heavy knife or plate.
    4.When the coals are gray and hot, lay the quail on the top rack. Grill for 6–8 minutes, until lightly browned, then turn and grill for 4–5 minutes longer, until juices run clear when pierced with the point of a knife.
    5.Transfer 2 quail to each of 2 warm plates, spoon a generous amount of salsa over each plate, and serve immediately with extra lime wedges.
