How To: Yellow Squash With Onions

This side dish based on a recipe by celebrated poet Maya Angelou gets an unforgettable, deep herbal flavor from the addition of rosemary: Cut 2 lb yellow squash into 1/4-inch slices with a mandoline or sharp knife. Heat 2 tbsp butter and 2 tbsp olive or vegetable oil in a large skillet over medium-high heat. Add 1 c thinly-sliced onion and 1 tsp minced garlic. Sauté until translucent, 2 minutes. Add squash, 3/4 tsp salt, 1/4 tsp pepper, 1/4 tsp dried rosemary (or 1/2 tsp fresh). Sauté, stirring often, until fragrant, 2-3 minutes (add up to 2 tbsp water if there's sticking). Reduce heat to medium low and continue cooking, turning often, until squash is very tender, about 30 minutes. Garnish with 2 tbsp minced chives. Red pepper romesco brings a bit of Spanish flavor to this easy vegetarian recipe. Place 2 whole pitas or flatbreads on a baking sheet and drizzle. Lightly with olive oil. Squeeze over a half pouch Haven's Kitchen romesco and spread evenly. Sprinkle over 1 c shredded mozzarella and about 6 oz halved cherry tomatoes. Bake at 450 F until bread is lightly toasted and cheese has melted, 5-8 minutes.
