Our Favorite Pulled Pork

With our pasture-raised pork, you get incredible, deep flavor unlike any other. That quality shines in classics like pulled pork. Give our recipe a try to make this barbecue favorite without a smoker. Here's what to do: Trim skin and excess fat from a 3-4 lb boneless pork shoulder, leaving about a quarter inch of fat. Divide the pork into 2 pieces if necessary to fit in you Dutch oven. In a small bowl, mix 2 tbsp brown sugar, 2 tbsp smoked paprika, 1 tbsp chili powder, 1 tbsp kosher salt, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin, and a few dashes of pepper. Rub 1/4 c Dijon mustard over the surface of the pork, then liberally coat all over with the spice mixture. Wrap pork in plastic wrap, then let sit in the fridge for 12 hours or overnight. When ready to cook, preheat the oven to 275 F. Heat 2 tbsp oil in a Dutch oven over medium high heat. Add pork and sear, turning to brown on all sides (be careful not to burn the spices). Pour in 12 oz lager beer and place a lid on top. Transfer pot to oven and let roast for 3 hours, turning once. Remove lid and cook until pork is fork-tender and internal temperature is 200 F, about 1 hour longer. Transfer pork to a cutting board and let rest 20-30 minutes; reserve the leftover juices. Shred the meat with two forks. Return pork to the pot and pour in a little bit of the reserved juices. Season with salt to taste and add a few spoonfuls of barbecue sauce if desired.

Our favorite and easiest fish to cook. Whether whole or the chop, roasting or grilling is so simple, almost impossible to overcook and great flavors and textures that range from firm and meaty to rich and unctuous. The pork belly of fish! Just three easy steps to set you up for success; preheat, season, and roast - that's it! Preheat oven to 400 or prepare your grill. Rub with olive oil or softened butter and season liberally with s+p. Place on tinfoil and place in your oven or grill and cover. Roast 10-12 min for chops or 20 for a whole fish. Once you master the basics, you can experiment with different herbs and spices and add your personal touch. To serve, gently peel off skin and carefully slide fillets away from each side, pulling away from the bones. Make sure you include the small morsels found at the edges-they're the most tender parts of the fillet.

How To Make Veal Mushroom Sliders

Our locally-sourced veal is surprisingly versatile and easy to work with. You can even use it to make a tasty burger that'll blow away your expectations. Give it a try in this slider recipe from our friends at Veal - Discover Delicious, funded by the Beef Checkoff. In a medium sized bowl, mix 8 oz ground veal, 8 oz chopped button mushrooms, 1/2 c breadcrumbs, 1 tsp garlic powder, 1/2 tsp onion powder, 1 tsp salt, 1 tsp pepper, and 2 tsp chopped parsley. Shape mixture into 6 patties, about 3 oz each. To make the topping, heat 3 tbsp canola oil in a medium sauté pan. Add 8 oz sliced onions and cook, tossing, until they brown, about 2-3 minutes. Add 3 oz quartered button mushrooms, salt, and pepper and continue cooking until completely caramelized, about 10-15 minutes. Add 1 tbsp chopped parsley and stir. Set aside, keeping warm. Heat a grill or grill pan for medium-high heat and cook each patty for 2-3 minutes per side. After flipping the patties, place a slice of gouda cheese on each and let melt. Remove patties from heat once they reach an internal temperature of 160 F. Arrange patties on 6 potato slider rolls and top each with 2 tablespoons of the mushroom and onion mixture before serving.

New Tomato Sauces From Carbone

Carbone has wowed New York City diners for years with their signature takes on Italian-American cuisine. Now, you can experience their much-adored cooking at home without needing to snag a reservation. Carbone's jarred pasta sauces are cooked in small batches, using only the finest imported Italian tomatoes and no preservatives. Give them a try with this chicken Parmesan recipe from chef Mario Carbone himself: With a mallet, pound a chicken breast to 1/4 inch thickness. Dredge the breast in all-purpose flour, coating all over, then dip it in an egg wash of 1-2 lightly-beaten eggs, letting the excess drip off. Coat the breast in bread crumbs. Heat a few tablespoons of canola oil in a pan and add the chicken, frying until golden brown on each side, 1-2 minutes per side. Transfer to a paper-towel-lined plate and set aside. In a small sauce pan, heat 1 c Carbone Tomato & Basil Sauce and bring to a simmer. Let simmer until reduced to about 3/4 c. Preheat the broiler. Place the chicken on a sheet pan and spread about 1/4 c tomato sauce over top. Lay over a few slices of mozzarella, then sprinkle with a bit of Parmesan. Place sheet under broiler and broil until cheeses melt. Pour remaining sauce into a serving dish, nestle the cutlet in the sauce, and garnish with fresh basil.
