1. Sun-Dried Tomato and Feta Guacamole on Toast
Let’s start with the classic avocado toast. But instead of plain mashed avocado, we topped our toasted bread with our guacamole with sun-dried tomato and feta. We know cheese and guac might be a controversial combination, but we promise it’s too good to pass up!
2. Mango Mint Guacamole on Cucumber
If you want a light and healthy snack, mango mint guacamole on cucumber is a winner. Wash and slice your cucumber horizontally and top your cucumber with guacamole with mango mint salsa for a refreshingly sweet combination. We also think these are the perfect bite-sized appetizers for any summer gathering. Cool.
3. Roasted Black Bean and Corn Guacamole on Sweet Potato Toast
Sweet potato toast is the new… toast. Start by cutting sweet potatoes lengthwise into thin slices. After you’re done slicing, season the sweet potatoes with oil, salt, and pepper. If you’re using a traditional toaster, just toast the potato twice!
If you use a toaster oven, preheat it to 400° and bake your potato slices for 30 minutes. When your potatoes are hot and ready, top them with guacamole with roasted corn and black beans for an easy and tasty breakfast!
