What You’ll Need:
Leftover stuffing
Leftover mashed potatoes
Fixings like bacon, chives, and cheese
Eggs
Leftover gravy
Cooking spray
What to Do:
Pre-heat your oven to 375° and spray your muffin tin with cooking spray.
Mix leftover stuffing with 1-2 eggs to bind the stuffing. Scoop a small handful and press it into each slot in a muffin tin.
Add a small scoop of mashed potatoes into each stuffing cup.
Add a fresh egg to the top of each cup. Top with cheese, bacon, and chives.
Bake for 12 minutes and enjoy! Top with gravy or even leftover cranberry sauce for a new way to brunch after Thanksgiving.
