Amelia Coulter of Sugarbuilt’s Bizcochitos (recipe adapted from many traditional recipes)
1 cup sugar
1 1/2 cups fresh leaf lard (you may substitute butter, but, says Amelia, lard makes them more tender)
2 tsp vanilla
4 1/2 cups flour
1 1/2 tsp baking powder
1 tsp salt
2 tsp anise seeds
1 tsp ground cinnamon
Zest from one orange
1/4 cup water
Cinnamon and sugar, for sprinkling on cookies
In a mixer, cream together the lard and sugar. Add anise and zest. Beat to combine before adding eggs and vanilla. Whisk together the flour, baking powder, anise seeds, cinnamon and salt. Add the dry ingredients alternately with the water and mix until it comes together. Wrap and chill dough for an hour and then roll to a 1/4-inch thick. Chill the dough again, cut out shapes and sprinkle with cinnamon and sugar. Bake at 350° F until just golden at the edges, about 12 minutes.
