A Breaducation: Just FreshDirect Artisan Bread

It’s the best thing since sliced…umm…bread.

A few of the things you don’t want in the ingredients of your daily bread are preservatives, bleach, and unpronounceable ingredients like “monoglycerides.” And it goes without saying, of course, that bread is always better if it’s made fresh by skilled local artisans using simple, but quality, ingredients.

With all of the aforementioned in mind, we partnered with two local bakeries to produce our own line of bread: Brooklyn Mills and Northside Bakery. All of the loaves and rolls are freshly baked up to at least six times a week, so you know what you’re getting is just out of the oven and is close as you can get to making it yourself at home.

NORTHSIDE BAKERY
Founded in Greenpoint in 1992, Northside Bakery quickly outgrew its original home and within its first year of operation relocated to the “North Side” of Williamsburg. Before long, the family-run business, which includes three brothers, one sister, and their parents, expanded its presence throughout the northeast and today is revered as some of the best bread in the area.

BROOKLYN MILLS
Aristo “Rusty” Janos was born and raised in Greece where he learned how to make fresh bread from his grandmother using Old World methods. Many years later, as a grown man and parent living in New York City, Rusty was shocked while looking for bread for his kids’ packed lunches at how all the leading brands filled their loaves with bleach and synthetic vitamins. So he decided to take matters into his own hands and opened his own bake shop making bread the old-fashioned way—using real ingredients—just like his grandmother used to back home in Greece.

What you'll need:
1 - 8 ounce Norwegian salmon fillet, skinned, deboned and divided into two 4 ounce fillets
½ teaspoon kosher salt
¼ teaspoon ground coriander
½ teaspoon smoked paprika
¼ teaspoon fresh cracked pepper
¼ cup honey
½ teaspoon sambal
1 tablespoon sliced red or green chilies

What you'll do:
1. In a heavy bottom sauce pan over medium high heat, add honey, sambal and chilies. Simmer for about 10 minutes. Remove pan from the heat and set aside. The longer the honey sits the more flavor the chilies release.
2. In the meantime, pat salmon dry and season with salt, coriander, smoked paprika and fresh cracked pepper.
3. Add oil to a cast iron skillet over medium high heat. Once the oil is hot, add salmon to the pan, presentation side down.
4. Cook the salmon for four minutes; flip and cook for another three minutes. Top salmon with glaze while in pan, to coat each filet.
5. Transfer to serving plates, top with more chili sauce, serve with brussels sprouts or your favorite vegetable, if desired.
