3 Breakfast Tacos for Father’s Day

Start the celebration for dad early with a breakfast taco party.


Each breakfast taco starts with a base of corn tortillas and eggs cooked in the style of your choice. Then, simply add your favorite breakfast foods! Craft whatever your heart desires, like an eggy three-cheese version, or even one with apples and a mild shredded cheddar. Delish!

1. Roasted Sweet Potato and Chorizo
What You’ll Need:
Tortilla
Eggs
Chorizo
Sweet potato chunks
Fresh cilantro
Hot sauce
Cotija Cheese
Olive oil
Salt and pepper

What to Do:
Pre-heat your oven to 400°. Cut your sweet potato chunks into smaller chunks and drizzle with olive oil, salt, and pepper. Bake for 30 minutes or until soft.

Remove the casing from your chorizo and crumble it in a non-stick pan. Heat on the stovetop until completely cooked.

Cook your eggs to your liking. We like scrambled eggs in this version, but an egg cooked over easy would be tasty, too!

Heat the tortilla on a non-stick pan for 30-60 seconds on each side until crispy.

Build your taco! Add your cooked sweet potatoes, chorizo, and eggs. Then, top with hot sauce, fresh cilantro, and cheese.

 

2. Vegetarian Black Bean and Salsa Verde
What You’ll Need:
Tortilla
Black Beans with Salsa Verde
Eggs
Cotija Cheese
Salsa verde

What to Do:
Cook your eggs to your liking. For this vegetarian version, we suggest a runny egg that will melt into the black beans.

Follow the instructions and heat your Black Beans and Salsa Verde Sides in a Snap in the microwave.

Heat the tortilla on a non-stick pan for 30-60 seconds on each side until crispy.

Build your taco by layering the black beans, egg, fresh salsa verde, and white crumbly cheese. Finish with a crackle of fresh salt and pepper.

 

3. Bacon and Avocado
What You’ll Need:

Tortilla
Eggs
Avocado
Bacon
Fresh cilantro
Salsa

What to Do:
Pre-heat your oven to 400° and bake your bacon for 20-30 minutes, flipping once.

Cook your eggs to your liking. For this version, we like scrambled eggs.

Heat the tortilla on a non-stick pan for 30-60 seconds on each side until crispy.

Start building your taco! Add scrambled eggs, bacon, freshly sliced avocado, a bit of salsa, and fresh cilantro.

What you'll need::
• 3 tbsp olive or avocado oil
• 1 tsp pink salt
• 1 container of mirepoix (chopped onion, carrot and celery)
• 3 cloves garlic, chopped
• 1 jalapeno, seeded and chopped (optional)
• 2 red bell peppers, chopped
• 1 pound ground turkey/beef/chicken (you can also sub in crumbled tofu)
• 1 tbsp chili powder
• 1 tsp cayenne pepper (optional)
• 1 tsp cumin powder
• 2 cups chicken or vegetable stock
• 1 large can of diced tomatoes (28 oz)
• 2-3 cans of beans (Black, pinto, kidney, refried or aduki beans are great choices.)

What you'll do::
In a large pot, add in the first six ingredients and sauté over medium heat until the onions and peppers have a chance to sweat and soften, about 5-7 minutes.

Add in meat of choice or tofu. Stir around and crumble using a wooden spoon until all the meat is mostly cooked.

Add in chili powder, cayenne (if using) and cumin. Stir ingredients around in the pot to prevent burning.

Add in stock, diced tomatoes and beans. If you are adding in extra chopped veggies, add them in now as well. Mix to combine.

Let simmer for about 40 minutes.

Fill your bowl with whatever toppings you’d like and enjoy!
