So if you’re looking for an appetizer that’ll send off the year in style, let us suggest this recipe for cacio e pepe (cheese and pepper) chips. You can trick them out however you like, adding truffles, caviar, or anything else that’s extra decadent. Here’s how to do it:
Cacio E Pepe Chips
Preheat the oven to 425 F, then take a bag of your favorite potato chips and spread them out on a baking tray.
Sprinkle over as much grated cheese as you like—the umami richness of Parmesan works especially well here.
Bake the chips in the oven until the cheese melts, about 4 minutes. Put them in a bowl and sprinkle with plenty of freshly-ground pepper. Garnish with any other toppings you like; for a truly over-the-top combo, we suggest balsamic pearls, truffles, and caviar!
