The caprese is one of our favorite go-to salads for the summer because it combines creamy mozzarella with tangy, in-season tomatoes. We thought we’d one-up our own favorite salad by serving them in avocados. Life. Changed.

What You’ll Need:
Avocados, halved
Mozzarella
Tomatoes like plum tomatoes or cherry tomatoes
Balsamic vinegar
Salt and pepper
What to Do:
Combine fresh mozzarella, halved cherry tomatoes, salt, pepper, and balsamic vinegar in a bowl.
Slice your avocados in half and remove the pits. Add a spoonful of the cheese and tomato mixture into each avocado half.
Top with another drizzle of balsamic vinegar and freshly cracked salt and serve.
