Family Dinner Made Easy with Lasagna Roll-Ups

Amanda Hawkins · April 4, 2016 ·

Time for a new twist on the family dinner staple. Instead of traditional layered lasagna, these roll-ups combine ready-to-eat rotisserie chicken and lots and lots of cheese. Click through learn how to use your FreshDirect rotisserie chicken for your next Monday night dinner.

chicken lasagna roll ups

What You’ll Need:
28-ounce can crushed tomatoes
Crushed red pepper flakes
Salt and pepper
Rotisserie chicken
1/2 cup grated parmesan cheese
1 cup mozzarella cheese
1 cup ricotta cheese
2 eggs
6 lasagna noodles
Cooking spray

What to Do:
Preheat your oven to 350°. While the oven is heating, boil the lasagna noodles until soft.

Shred and separate pieces of the rotisserie chicken and place into a bowl. Add parmesan cheese, eggs, and 1/2 cup of mozzarella and stir.

Mix red pepper flakes, salt, and pepper to canned tomatoes or your favorite tomato-based sauce.

Line a baking sheet with cooking spray and a layer of sauce.

To create the roll-ups, spread a dollop of ricotta cheese on a lasagna noodle and add a spoonful of shredded chicken and cheese. Roll the lasagna noodle into a roll-up and place it seam-side down into the baking dish.

Top with more sauce and the rest of the mozzarella.

Bake for 40 minutes, top with fresh basil, and serve!
