We invited our friends from Modern Farmer to our first-annual Friendsgiving. Modern Farmer’s community relations director, Sarah, took two classic #Thanksgiving dishes, cranberries and sweet potato casserole, and brought them together in this delectable #FDFriendsgiving mashup. Yields: 6-8 servings
- 5-6 sweet potatoes, peeled and cut into 1-inch pieces (4 cups mashed)
- 1/4 cup unsalted butter
- 4-5 oranges, squeezed (about 1 cup juice)
- 12 ounces fresh cranberries, rinsed
- ½ cup sugar
- 1 bag Kraft Miniature Marshmallows
- Salt to taste
Pre-heat oven to 350°.
Cover sweet potatoes with water in a large pot, and bring to a boil. Cook until fork tender. Zest orange peel, and squeeze oranges for fresh juice. Combine cranberries, ½ cup orange juice, 1/4 cup water, ½ cup sugar, and 1 tablespoon orange zest in small saucepan. Cook over medium heat 7-10 minutes until cranberries pop, then remove from heat. Drain sweet potatoes. Mash potatoes with butter, or pulse in a food processor until smooth. Add salt to taste. Add remaining ½ cup orange juice and 1 cup marshmallows to mashed potatoes. Spoon potatoes into 1.5-quart casserole dish or oven-safe ramekins, then cover with cranberry sauce.
Bake for 30 minutes. Cover casserole with remaining marshmallows; return to oven until lightly browned. Serve while hot!
