Summer has officially arrived, which means endless warm nights and lots of backyard grilling. Our friends at Gotham Greens have you veggie-lovers covered with this seasonal recipe that’s great on the grill and on the go.
What to Do:
Preheat the grill or grill pan over medium heat.
Brush both sides of eggplant, zucchini, squash, and corn with olive oil and sprinkle with salt and pepper.
Grill the veggies until tender and slightly browned, about four minutes per side.
Combine basil, olive oil, garlic, salt, and pepper. Mix by hand or in a blender until smooth.
Top your veggies with the basil sauce and serve in Gotham Greens Butterhead Lettuce.
