It’s better than the version you can get at those fast food restaurants, and you can pick your own toppings!
What You’ll Need:
Ready to eat brown rice
1 can black beans
1 can corn
Guacamole
Cilantro
Limes
Romaine lettuce
Pico de Gallo
Shredded cheese
Tortilla chips
What to Do:
Prep all of your ingredients: Drain and rinse the black beans and corn, heat your brown rice, and chop romaine lettuce.
Simply toss everything in a bowl and serve! We like to eat ours with tortilla chips like a dip, but grab a fork and dig in! This is a meat-free version, but the bowl could be just as tasty with ready-to-eat oregano lime chicken or shredded beef.
