Our mission to bring our customers great-tasting food made with real ingredients takes us all over the world. But when we decided to launch a line of artisanal pasta, we knew there was only one place to look: Italy.
Our producer, Tarall’Oro, is a pastificio (pasta factory) located in the picturesque town of Turi, just south-east of Bari. Founded in 1982, the company first began life as a bakery, but moved into pasta production during the 1990s, and is now dedicated solely to the historic art of pasta-making. The company’s proximity to Bari, the heart of durum wheat production in Italy, is no coincidence, for this is the primary ingredient in the pasta.
When it comes to other ingredients, Tarall’Oro specially selects only the finest to ensure the best-tasting product possible. By using authentic bronze dies, which extrude the pasta into the shapes we know and love, a higher quality pasta is made, while at the same time creating tiny ridges, giving it an almost “dusty” look. This allows sauces to better adhere to the pasta, and you can taste the difference in every bite!
The pasta is then slow dried at a low temperature for a period of 18–24 hours to preserve the color and nutritional properties of the product, allowing for an easier digestion and creating a pasta that when cooked, almost melts in your mouth. Many popular pastas are dried for a shorter period of 4-8 hours at a high temperature, removing much of the nutritional content and turning the pasta yellow and shiny, which is harder to digest.
