Rabbits aren’t the only creatures that love carrots!
This is the perfect side dish for your Easter dinner. Even better? It only takes 15 minutes to prepare and serve.
What You’ll Need:
1 pound rainbow carrots
2 tablespoons unsalted butter
Salt and peper
2 tablespoons grainy mustard
Optional: fresh parsley
What to Do:
Preheat your oven to 450°.
Wash and prep your carrots by removing the tops. (Did you know that you can cook with carrot tops? Save them and blend them into your favorite pesto recipe.) Place them on a baking sheet.
Melt butter over medium heat. As it melts, add grainy mustard.
Cover carrots with butter and mustard mixture. Bake in the oven for 12–15 minutes, until the carrots are cooked but still slightly crunchy.
Top with fresh parsley and serve!
