Though we’re eating this for International Bacon Day (because it’s full of the good stuff, duh!), this one pot dish is great all-year long.
What You’ll Need:
Bacon
1 pint cherry tomatoes
2 cups spinach
1 clove garlic
Eggs
1 pound linguine or spaghetti
Olive oil
Salt
Pepper
Parmesan cheese
What to Do:
Prep your veggies: Rinse spinach, mince garlic, and slice tomatoes into quarters.
In a large, nonstick pot, cook your bacon. Once fully cooked and crispy, set aside.
Using the same pot, sauté garlic, tomatoes, and spinach. Set aside.
In the pot, add a pinch of salt and water. Boil. Add pasta and cook until your desire consistency. As the pasta cooks, chop your cooled bacon into small bite-sized pieces.
Drain and add the pasta back into the pot. Add in the bacon, tomatoes, and spinach, and a drizzle of olive oil, salt, and pepper. Heat together for a few minutes and plate in bowls.
Again, in the same pot, poach your eggs. Once cooked, add eggs on top of your BLT pasta bowls. Top with freshly cracked sea salt, pepper, and grated parmesan cheese.
