It’s great to know that the pork you’re buying is organic, but knowing where it comes from and that it’s humanely raised is even better.
That’s why we’re working with a coalition of five farms from New York, New Jersey, and Virginia that all share the same important mission of raising certified organic, pasture-raised pork. The coalition was established in 1995 by Mark and Lynn Faille, who operate each of their family farms the way they believe is right—raising pigs and livestock in as natural an environment as possible, where they can graze on fertile, well-kept land and grow and develop with little interference from the farmer.
The Failles don’t believe in gestation or farrowing crates like the ones used in factory farms, which consist of pigs being kept in rows of small pens during and after pregnancy. Instead, they raise their pigs through the method of natural breeding, holding high the importance of the mother spending time with her young from the start.
The animals on the Failles’ farms are also encouraged to roam free in 13-14 acre paddocks and graze on organic, vegetarian feed at their leisure. This feeding method, known as “free-choice feeding,” means the pigs eat as much as they want, whenever they want, in an environment that mimics their life in the wild. And when they’re not grazing and roaming around the land, the animals have access to shade, shelter, and, of course, mud holes in which to practice every pig’s favorite pastime—wallowing, or rolling their body around in mud. Because pigs don’t have sweat glands, they rely on this method to cool down their body. Under natural, free-range conditions, they’re able to do just that.
To date, the Failles own approximately 2,200 acres of land in the state of New Jersey, 2,000 acres in Pennsylvania, and most recently began farming 350 acres in Maryland, in addition to their farmland in New York and Virginia. Before they began operating, there was no local, pasture-raised organic pork program in the New York area. In fact, the closest we were able to get to organic pork came from Canada.
That’s why we were so excited when given the opportunity to work with the Failles in 2015. We know how important it is for our customers to have access to local, organic pork that’s humanely raised—plus, why get it from Canada when you can source it from your own backyard?
Today we work with Mark and his coalition of farmers to deliver consistent, high-quality meat that keeps our customers coming back for more. The most popular item we produce together is our pork tenderloin. As its name implies, it’s the most tender cut in the bunch and cooks quickly and easily, making a crowd-pleasing centerpiece for any occasion.
