It’s one of the quickest appetizers we’ve ever made.
Slather this fresh spread on crusty toasted bread or use it as a dip for your favorite spring veggies.
What You’ll Need:
1 bag frozen peas, about 2 cups
1 1/2 cups ricotta cheese
1 clove garlic, minced
Lemon zest from 1 lemon
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
3 fresh mint leaves
Baguette
Optional toppings: mint leaves, olive oil, sliced rashes
What to Do:
Empty the bag of frozen peas in a microwave-safe bowl and top with a damp paper towel. Microwave in 30-second increments until the peas are no longer frozen, but room temperature.
Mince garlic and zest lemon.
Add peas, ricotta, garlic, lemon zest, olive oil, salt, pepper, and fresh mint to a blender. Blend until smooth. (Or, if you like your spreads a little chunkier, pulse until the peas and ricotta have combined but aren’t totally smooth.)
Spread on toasted baguette and top with sliced radishes, a drizzle of olive oil, and more freshly cracked salt and pepper. Garnish with fresh mint and serve.
