Summer was meant for seasonal peaches and corn, and grilling up a nice medium rare steak.
What You’ll Need:
3 medium peaches
2 ears sweet corn
1 cup cherry or grape tomatoes
1/3 cup diced red onion
1 jalapeño
¼ cup cilantro
1 large avocado
2 tablespoons fresh lime juice
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 teaspoon ground cayenne pepper
2 pounds skirt steak,
Salt and pepper
1/4 cup olive oil
What to Do:
Prep your ingredients: Dice the peaches, onions, jalapeño, and avocado, remove the kernels off the corn cobs, halve your cherry tomatoes, and chop your cilantro.
In a large bowl, combine peaches, corn, tomatoes, red onion, jalapeño, and cilantro. Stir in the avocado. Add lime juice and season with salt and pepper.
Combine cumin, oregano, and cayenne pepper in a small bowl. Season steak with salt and pepper and rub with the spice mixture.
In a 12-inch skillet, heat oil over medium-high heat until lightly smoking. Add steaks and cook until your desired temperature. Let rest.
Slice steak across the grain and serve with corn salsa.
