Yep, you read that right: a pizza salad.
What You’ll Need:
2 ounces pepperoni
2 cloves garlic, thinly sliced
2 tablespoons olive oil
6 cups spring mix
1/2 medium red bell pepper, thinly sliced
1/2 small red onion, thinly sliced
2 ounces button mushrooms, thinly sliced
2 tablespoons mozzarella cheese
What to Do:
Make your pepperoni chips: Heat a non-stick pan over high heat. Add olive oil and thinly-sliced garlic and heat for 30 seconds.
Add pepperoni and cook until the corners start to turn upward, about one minute. Flip and fry on the other side. Remove pepperoni chips and put on a plate covered in paper towels to cool. Keep “frying” pepperoni in batches.
Prep the rest of your salad ingredients: Slice onions, mushrooms, and bell peppers. Wash spring mix.
While the pepperoni chips cool, mix together lettuce, pepper, onion, and mushrooms. Add the pepperoni chips and sprinkle on a hefty amount of mozzarella cheese.
Use your favorite dressing to top it off. We used Italian-style dressing, but blue cheese or ranch dressing would also work!
