What You’ll Need:
Sugar Cookie
2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups butter, softened
1 1/2 cups granulated sugar
1 egg
1 teaspoon vanilla extract
Toppings
Vanilla Greek yogurt
Kiwi
Strawberries
Mandarin oranges
Blueberries
Blackberries
What to Do:
For the sugar cookie, preheat oven to 375°. Mix flour, baking soda, and baking powder and set aside.
Combine butter and sugar until smooth. Beat in the egg and vanilla.
Gradually blend in dry ingredients. If the dough is dry, gradually add in more butter until you can roll the dough smooth.
Cover a cookie sheet with cooking spray or parchment paper. Roll the dough into a half circle/rainbow shape. Bake 8-10 minutes or until golden brown.
As the cookie cools, start slicing your fruit. Depending on the size of the blackberries, you’ll need to cut off the tip so they lay flat on the cookie.
Cover your cooled cookie with vanilla Greek yogurt. Then, add the fruit, starting with strawberries on the outer edge and moving inward with oranges, kiwis, blueberries, and blackberries. Slice and serve!
