Revive Italian Dinner Parties with Pasta Cups

Preparing a dinner party for a room full of guests with different tastes? Our friend and esteemed food historian, Francine Segan, has the perfect solution: pasta cups! These nests of spaghetti are baked into bite-sized cups that can be topped with whatever sauce or topping your guests prefer. Get the recipe after the jump.

With these versatile pasta cups, every one of your guests can create their own perfect pasta bites. After you’ve baked them, simply put them out with a selection of tasty toppings and let your guests go to town!

What You’ll Need:
Olive oil
2 eggs
3 tablespoons grated aged cheese
2 tablespoons butter
1/4 pound spaghetti
Salt
Optional: toppings like cheeses, meats, sauces, etc.

What to Do:
1) Preheat the oven to 350° F.

2) Lightly oil 24 mini muffin cups (or use disposable mini cups and set them on a baking pan).

3) Combine the egg, grated cheese and butter in a bowl.

4) Cook the pasta in salted boiling water until al dente, drain and toss with the ingredients in the bowl until well combined and almost all absorbed. Using a fork, twirl a few strands into a nest shape and put into a prepared muffin cup. Repeat.

5) Drizzle any remaining egg mixture on top of the nests.

6) If you choose, you can bake a topping into the center of the nest, or you can bake them plain and top them afterward.

7) Bake for about 12 minutes, or until set.

Meals on Main Street
Meals on Main Street / @CaritasPC 's focus is on feeding people, and their programs are designed to meet their clients' needs in a variety of ways, from pop-up pantries to home deliveries, with the help of over 500 active volunteers. Meal on Main Street began making deliveries to homes at the start of the pandemic with a list of 70 families. By the end of 2020, the list had grown to 90 and then early in 2021, to 110 families. Food Pantry at the Children's Museum of the East End 
After learning that 80% of families in its outreach programs were laid off last spring, the Children’s Museum of the East End in Bridgehampton, NY, launched a food pantry that is now serving over 75 families each week. Our responsibly sourced, wild-caught flounder from our partner Icemar in Iceland pairs perfectly with a cheesy crust and juicy roasted tomatoes. 

Preheat oven to 450 degrees. In a bowl, toss in 2 containers cherry tomatoes, 4 tbsp olive oil, 6 sprigs thyme, salt and pepper. Let sit 10 minutes, then transfer to a foil-lined sheet. Working in same bowl, coat 4 flounder fillets with 2 tbsp olive oil, salt and pepper. Fold each fillet in half lengthwise and arrange next to tomatoes on sheet. Combine 1/2 c grated Parmesan, 1/2 c panko, and 2 tbsp olive oil in same bowl, then sprinkle evenly over tops of fish on sheet (any extra can go on the tomatoes). Roast 12 mins; if crumbs need more browning, finish under broiler.
