Ellie Dworkin · August 18, 2016 ·

It’s our spin on bruschetta.

Don’t be fooled by Hepworth Farms’ ugly tomatoes. Their juicy sweet flavor is so delicious that we eat them like apples—we bite right into them. However, if raw tomatoes aren’t your style, we’ve sliced and roasted them on some tinfoil to bring our their flavor even more. The simpler the better with these flavorful beauties—erm, uglies?

RELATED: 10 Ways to Cook with Tomatoes

What You’ll Need:
Hepworth Farms’ heirloom tomatoes
Extra-virgin olive oil
Salt
Pepper
Balsamic vinegar

What to Do:
Preheat the oven to 400º.

Slice tomatoes about a quarter-inch thick. Lay them tinfoil and coat them evenly with a little EVOO, salt, and pepper.

Roast in the oven for about 30 minutes or less, depending on how roasted you like your tomatoes.

Drizzle balsamic vinegar to top them off. Now you’ve got yourself the perfect side dish for your steak dinner or grilled fish.

Roasted tomatoes are great plain, but if you’re riding the toast train, we’ve got your back with our easy spin on bruschetta.

What You’ll Need:
Roasted tomatoes from the above recipe
Brooklyn Mills Whole Grain Bread
Balsamic vinegar
Fresh basil

What to Do:
Slice bread to your desired thickness and toast until crispy.

Depending on size, top your toast with two or three tomatoes. Drizzle balsamic lightly over the tomatoes and finish it off with a fresh basil leaf and another crack of salt and pepper.

If you’re feeling adventurous, add mozzarella for a Caprese-style salad on toast. We suggest our Ciliegini mozzarella balls.
