Since the 18th Century, the shamrock has been used as the symbol of Ireland, making this dish the perfect way to celebrate St. Patrick’s Day. But instead of suggesting that you eat an actual shamrock, we’re offering this super simple, super tasty recipe that just looks one instead. So grab a few eggs and get crackin’!
What You’ll Need:
Green bell peppers
Eggs
Parmesan cheese
Salt and pepper
Olive oil
What to Do:
Lay peppers on their sides and slice them to make small rings. Remove excess seeds.
Place your green pepper “shamrocks” in a hot pan with a drizzle of olive oil.
Crack individual eggs into each pepper and start cookin’! Add salt and pepper to taste, and if you’re feeling adventurous, add a sprinkle of parmesan cheese.
Good luck!
