Light and delicious, this no-cook summer salad combines peak season produce and tasty shrimp for a filling dish.
What You’ll Need:
1 pound grilled shrimp, chopped
3 mangos, peeled and cut
1/2 red bell pepper, seeded and chopped
1/2 avocado, chopped
3 tbsp cilantro, chopped
1/2 jalapeño pepper, seeded and chopped (optional)
Juice of 2 limes
What to Do:
Place all ingredients except salt into a bowl to combine. Season with the salt and lime juice. Refrigerate for at least 1 hour then enjoy!
