Smarter Ways to Build a Better Burger

Want the satisfaction of a burger without throwing away your health or your waistline? Love saving time in the kitchen? Well, you’re in luck! I spent last weekend coming up with two fantastic burgers that are both quick to make and healthy for you too.

The first is a better-for-you beef burger (for those of you who agree that a burger means beef). And for the adventurous types, the second is a lovely vegan quinoa-black bean burger spiked with apple cider vinegar (trust me, it does something nice with the earthy base notes), prepped in the pan with heart-healthy walnut oil. What makes them health-smart? Sane portion sizes, fewer calories, and more whole grains and veggies! Each burger was prepped and plated in well under 30 minutes.

A Better Beef Burger (150 calories)

What I think is great about this recipe is that, though I could have done everything from scratch – I didn’t have to!

I purposefully found ways to take shortcuts, without compromising on nutrition or quality ingredients, so you can spend less time in the kitchen this summer and still feel great about what you put on the table to nourish you and your family.

Ingredients (makes approximately 15 patties):

  • 1 egg white (I used Nature’s Yoke Organic Large Brown Eggs)
  • 2 T red wine (water can be substituted)
  • 1/2 C cooked whole grains (I used our freshly-prepared steamed quinoa)
  • 1 C chopped veggies (I used our fajita mix which helped cut down the prep time to just a minute or two)
  • 1/8 t pepper, or to taste
  • 1 lb 90% lean ground beef, raised without antibiotics, from Pat LaFrieda
  • Mini brioche slider rolls, sliced in half, with top scooped out
  • Recommended Toppings:
    • Red leaf lettuce
    • On the vine tomato
    • Honey Dijon mustard
    • Red onion
    • Half-sour pickles

This burger was quickly made with a few shortcuts that didn't compromise on flavor nor nutrition.

Directions:

  1. Combine egg white with cooked whole grains, chopped veggies, and red wine.
  2. Add lean ground beef until just mixed.
  3. With clean hands, create small patties about 2.5” across and ½ inch thick. This recipe will yield approximately 15 patties.
  4. Add patties to a hot skillet. No additional cooking oil needed. Cook for 3-5 minutes per side, until fully cooked; flipping once. Patties should reach an internal temperature of 160° Fahrenheit for food safety.
  5. Remove fully cooked patties by lifting out of skillet and draining on paper towels.

To plate your burger, slice a mini brioche roll width-wise, and scoop out some of the breading from the rounded top piece. The main reason to do this is to provide a balance of bread to burger. Otherwise, the roll can be a bit overwhelming. Plus, the carved out top conveniently leaves room for toppings. Cutting down on calories is an added bonus!

Add your favorite toppings. I used honey Dijon mustard, a slice of a vine-ripened tomato, red leaf lettuce, red onion, and half-sour pickles (which taste fresher than regular pickles, and are lower in sodium).

150 calories; 5.5g total fat (8.5%); 2.5g sat fat (12.5%); 35mg cholesterol (11.5%); 300mg sodium (12.5%); 16g carbs; 1g fiber; 3g sugars; 9g protein; 4% calcium; 10% iron; 13% vitamin C; 8% vitamin A.

Vegan Quinoa Black Bean Burger

Vegan Quinoa-Black Bean Burger (145 calories)

This burger concept is packed with plant-based protein from the quinoa and the black beans.

The patty itself is vegan, but if you follow a strict vegan diet, please note that our mini-brioche rolls are not vegan.

Ingredients (makes approximately 15 patties)

  • 1 15 oz can low-sodium black beans, rinsed and drained
  • 1/2 C FreshDirect salsa
  • 1 C cooked whole grains (I used our FreshDirect cooked quinoa)
  • 1/4 C Bragg Organic Raw Unfiltered Apple Cider Vinegar
  • 1/2 t (or to taste), chili or cayenne powder
  • 3 t Walnut oil
  • Recommended Toppings:
    • FreshDirect guacamole
    • Red onion

Directions:

  1. Coarsely mash the rinsed and drained black beans.
  2. Mix mashed black beans with cooked whole grains, salsa, apple cider vinegar, and chili powder until combined.
  3. With clean hands, create small patties about 2.5” across and ½ inch thick. This recipe will yield approximately 15 patties.
  4. For each batch, heat about a teaspoon of walnut oil in the skillet per about 5 patties. Cook for 3-5 minutes per side, or to desired doneness; flipping once.
  5. Remove cooked patties by lifting out of skillet and draining on paper towels.

To plate your burger, slice a mini brioche roll width-wise, and scoop out some of the breading from the rounded top piece. As mentioned above, the main reason to do this is to provide a balance of bread to burger. Otherwise, the roll can be a bit overwhelming. Plus, the carved out top conveniently leaves room for toppings. Cutting down on calories is an added bonus! Add your favorite toppings. I used our guacamole and red onions.

What You’ll Need:
- 2 strips thick-cut bacon, cut into 1/4-inch pieces
- 4 cippolini onions peeled and cut into sixths, keep root intact
- 3 medium carrots, peeled and cut into ½-inch pieces
- 4 hakurei turnips, greens trimmed, peeled and quartered
- 1 medium clove of garlic, thickly sliced
- 1/3 head of cabbage, cut into 1-inch pieces
- 5 fingerling potatoes cut into 1/3-inch coins
- 4 cups water
- Olive oil
- Kosher or sea salt and black pepper
- 4 6- 8 oz cod fillets

What to Do:
Place a 12” wide pot on medium heat and add 1 tbsp olive oil and bacon. Cook, stirring often until bacon starts to brown.

Add onions and garlic, and cook, gently turning until onions start to lightly brown. Add carrots and a few pinches of salt. Continue to cook for approximately 5 minutes, stirring occasionally. Lower heat if vegetables start to brown. Add turnips and cook a few minutes more.

Add cabbage and potatoes, 1 tsp salt, a pinch of black pepper and the water.

Bring to a simmer and cook approximately 5 to 8 minutes.

Season fillets well with salt & pepper while the soup is simmering, allowing the seasoning to penetrate.

After the soup has simmered, nestle the fillets into the soup, gently shaking the pot to allow the fish to settle in. Spoon some soup over the top of the fillets, adjust heat to low. Cover the soup and allow to simmer for approximately 5 minutes.

Using a spatula, remove the fillets and place in individual soup bowls. Adjust seasoning and evenly divide vegetables and broth into the bowls. Add some cracked black pepper on top and a drizzle of olive oil to serve.
Think outside of the box at your next taco night w Think outside of the box at your next taco night with this recipe where everything is cooked simply on a sheet pan. We love making these tacos with salmon, but feel free to swap it with shrimp, scallops, or another fish fillet.

What you'll need:
- One third of a 7 oz can of chipotle peppers in adobo (about 1/4 cup)
- 1/2 cup honey
- 1/2 cup lightly-packed brown sugar
- 1/4 cup soy sauce
- 1/4 cup freshly-squeezed lime juice
- 1 teaspoon cumin
- 1 small container grape tomatoes
- 1 onion, cut into wedges through root end
- 6 scallion bottoms (trim off the green parts)
- 1 poblano pepper, cut into 1-inch strips
- 1 red bell pepper, cut into 1-inch strips
- For serving: tortillas, lime wedges, sour cream

What to do:
Preheat oven to 400 F. Season salmon with salt and pepper and set aside.

Place chipotles in adobo in food processor or blender, along with honey, lightly-packed brown sugar, soy sauce, lime juice, and cumin. Blend until well-combined. Set aside a few tablespoons of sauce for serving, then transfer the rest to a large bowl.

Place salmon in bowl and evenly-coat all over in sauce. Transfer fillets to a foil-lined baking sheet, leaving excess sauce in bowl. Add to bowl tomatoes, onion wedges, poblano and bell peppers, and scallions. Toss to coat in sauce, then add in an even layer to the baking sheet with the salmon.

Roast everything in the oven until salmon is done and vegetables lightly caramelized, about 10 minutes. Serve inside tortillas with lime wedges, sour cream, and reserved sauce.
