Save time by using our pre-cut sweet potatoes and swiss chard for this bright and tasty vegetarian-friendly breakfast.
What You’ll Need:

What to Do:
Drizzle olive oil into a cast iron skillet and place on high heat. Save time and use our pre-cut sweet potatoes and cook them until soft.
Add in our pre-cut swiss chard and cook until soft, too. (If you only have full sweet potatoes and swiss chard, peel and chop your potatoes into small squares. Roughly chop chard into 1-inch slices.)
Crack two eggs into the skillet and cook until the egg whites are cooked. Top with salt and freshly cracked pepper and serve!
