Meet the latest breakfast trend: sweet potato toast. We love this for the summer because it skips the heavy bread without sacrificing avocado toast’s delicious flavor. Plus, it’s super quick and easy to make. Win and win.

What You’ll Need:
Sweet potatoes
Guacamole with roasted corn and black beans
Olive oil
Salt and pepper
What to Do:
Slice the sweet potatoes lengthwise into toast-like pieces, approximately 1/4-inch thick. Season the sweet potatoes with oil, salt, and pepper.
If you’re using a toaster, toast it twice! If you use a toaster oven, preheat to 400° and bake for 30 minutes or until lightly toasted.
When your sweet potato “toast” is done, top it with avocado and serve. Instead of traditional avocado, we topped our ‘taters with our new corn and black bean guac. So good.
