Smoothie Bowl
What You’ll Need:
Base:
1 cup Cascadian Farms frozen blueberries
1 banana
1/2 cup almond milk
1/2 cup Greek yogurt
Toppings:
Cascadian Farms Oats & Honey Granola
Sliced banana
Chia seeds
Fresh fruit, such as blueberries or raspberries
What to Do:
In a blender, combine frozen berries, 1 banana, almond milk, and Greek yogurt until smooth. Pour into your favorite bowl and top with granola, sliced banana, chia seeds, and fresh fruit. Get creative and enjoy!
Now for the savory recipe!
Frittata:
What You’ll Need:
2 Tbsp. olive oil
3 cups Cascadian Farms frozen vegetables (we used fire-roasted sweet potatoes, spinach, and kale)
6-8 eggs
1/3 cup whole milk or half & half
1/4 tsp salt
1/8 tsp pepper
1/3 cup goat cheese (or cheese of choice)
What to Do:
Preheat oven to 375°.
Add 2 Tbsp. oil to a large skillet or cast iron pan, then saute frozen vegetables over medium-high heat, until thawed and tender. Drain any excess water, if necessary.
In a separate bowl, whisk eggs, milk, salt, and pepper until combined. Pour into skillet and mix–egg mixture should just cover vegetables. Cook until eggs begin to lightly firm. Add sprinkles of goat cheese to the top, then bake in center rack of oven until top begins to crisp, approximately 15 minutes.
