We love them because they look like our favorite sweet breakfast treat (that rhymes with Top Parts) and they’re bursting with taco filling!
What You’ll Need:
2 boxes refrigerated pie crust
1 tablespoon olive oil
1/2 onion, diced
1/2 pound ground beef or Beyond Meat
1 tablespoon taco seasoning
1/2 can corn
1/2 can black beans
1 cup shredded cheddar
1 cup sour cream or Greek yogurt
Juice of 1 lime
Salt and pepper
What to Do:
Preheat your oven to 350°.
Add olive oil to a pan on high heat. Add onion and cook until soft, approximately 5 minutes. Add the ground beef and taco seasoning and heat until thoroughly cooked.
Drain corn and black beans. To the meat and onions, add 1/2 can of corn and 1/2 can of black beans. Heat through.
While the meat, corn, and beans are cooking, roll out the pie crust and cut into 12 even rectangles.
Add the beef mixture in the middle of six of the rectangles. Top with shredded cheese. Cover the meat and cheese with the other six pieces of pie crust. Press the sides together with a fork and cut two small Xs into the top of each hand pie.
Whisk an egg and cover the pies with an egg wash. Cover with sesame seeds.
Bake for 15 minutes or until golden brown.
To make your avocado cream, combine pitted avocados, sour cream (or Greek yogurt), lime juice, and salt and pepper. Blend and drizzle on top or serve as a dipping sauce.
