Build Your Own Mimosa Bar

Amanda Hawkins · April 18, 2015 ·

If Bloody Marys are the brunch must-have of the decade, mimosas are its slightly classier counterpart. (I mean, who could resist those bubbles?) But don’t stop at just OJ and champagne. There are literally dozens of sweet and savory combinations—yes, savory paired with a bit of bubbly works, too—to take your mimosa to the next level.

This cioppino recipe is excellent for a quick and This cioppino recipe is excellent for a quick and warming weeknight meal. Typically, it would be made with whatever the catch of the day was, and you can feel free do the same here by swapping out any other fish or shellfish you’ve got—clams, crab, squid, lobster, halibut, or sea bass would all be worthy choices.

What you'll need:
- 3 tablespoons + 1/2 cup olive oil
- 1 medium onion, diced
- 1 fennel bulb, diced
- 2 tablespoons capers, rinsed and chopped
- ½ cup kalamata olives, rinsed and chopped
- 2 teaspoons kosher salt
- 3 garlic cloves, minced
- ½ teaspoon chili flakes
- 2 cups dry white wine
- One 28 oz. can of crushed tomatoes
- 2 cups water
-2 lb. mussels
- One 8–10 oz. fillet of cod or other white fish (skin may be left on or off)
- ½ lb. shrimp

What to do:
Heat 3 tablespoons olive oil in a heavy pot over medium heat. Add onion, fennel, capers, olives and salt. Sauté a few minutes until onion and fennel begin to soften. Toss in the garlic and sauté until fragrant, 1-2 minutes more.

Stir in chili flakes, then pour in white wine. Simmer until liquid is mostly evaporated, then stir in crushed tomatoes, ½ cup olive oil, and 2 cups water. Simmer for a few minutes, then add mussels. Cover and simmer 3 minutes.

Cut fish into bite-sized pieces and add to stew along with shrimp. Simmer uncovered a few minutes more until both are cooked through. Serve in bowls with crusty bread and salted butter.

Whether you’ve got resolutions or not, January i Whether you’ve got resolutions or not, January is a time for foods that are light yet hearty: ones that are fortifying enough to fight the cold temps while also helping you come down from the excesses of the holidays. To that end, we’re totally digging this recipe from the FreshDirect team for chili with a secret ingredient: pumpkin!

What you'll need:
- 2 tablespoons olive oil
- 1 small yellow onion, chopped
- 1 medium bell pepper, cored, seeded, and chopped
- 2 small jalapeños, ribs and seeds removed, minced
- 2 cloves garlic, minced
- 1 lb white or dark meat ground turkey
- One 14.5 oz can diced tomatoes with their liquid
- One 15 oz can pumpkin purée
- 1 cup water
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- One 15 oz can black beans, drained and rinsed

What to do:
Heat olive oil in a large pot over medium-high heat. Add onion, bell pepper, jalapeños, and garlic. Cook, stirring often, until tender, about 5 minutes.
Add ground turkey and break up into pieces. Cook a few minutes until browned. Stir in diced tomatoes, pumpkin purée, water, chili powder, cumin, salt, and pepper. Bring mixture to a boil, then reduce heat to low.
Stir in black beans. Cover pot and simmer, stirring occasionally, for 30 minutes. Divide between bowls and add your favorite toppings.
