Nothing beats a crunchy, refreshing salad. Bust out your on-trend spiralizer and get to work on this sweet potato salad with creamy avocado dressing! If you aren’t a big fan of sweet potatoes, swap in another veggie—we think cucumbers are great and you still keep that crunch. And if you don’t want to spiralize a sweet potato, use pre-made veggie noodles from brands like Hungry Root.
Creamy Avocado Dressing
What You’ll Need:
1 avocado
1 clove garlic
3 limes
1/4 cup olive oil
Salt and pepper

What You’ll Need:

What to Do:
Juice the limes first. In a food processor or blender, combine avocado, garlic, lime juice, olive oil, and salt and pepper and blend until creamy. Keep adding more olive oil (or water) until you reach the consistency you desire.
Remove the skin from your potatoes and use a spiralizer to cut them into the noodle shape. In a pan, heat olive oil, salt, and pepper. Add your “noodles” and heat for 5-10 minutes to soften.
Let your noodles cool and top with your avocado dressing. For extra crunch we added sunflower seeds, but this could be great with more veggies and hard boiled eggs for a complete meal.
