It’s the perfect weeknight meal that takes just minutes to prepare. Seriously!
What You’ll Need:
1 rotisserie chicken
1 box pre-washed romaine lettuce leaves
1 9-ounce container guacamole
1 8-ounce container mild salsa
2 5-ounce containers corn and black bean salsa or can of black beans, washed and drained
1 bag organic Mexican blend shredded cheese
What to Do:
Separate white-meat chicken breast from the legs and wings.
Slice the meat off of the bones. Cut into 1×1-inch bite size pieces.
Place down 3 romaine leaves (per person) on a plate with curved edges facing up.
Using a spoon, spread 1 tablespoon of guacamole onto each lettuce leaf
Then, add 1/4 cup of chicken (approximately 8 cubes), then 1 tablespoon of salsa, 1 tablespoon of corn and black bean salad, 1 teaspoon cheese to each lettuce leaf.
Sprinkle 1/4 teaspoon of taco seasoning over all 3 tacos and voila! Serves approximately 4-6 people.
