Warm Up with this White Chicken Chili Recipe

Chili made with chicken is a lighter alternative to beef that packs just as much flavor. This version is perfect for a chilly night or serving to a crowd on game day.

What You’ll Need:
1 whole chicken, about 4 lb., or 3 lb. boneless chicken breasts or thighs
2 tablespoons olive oil, plus more for drizzling
1 yellow onion, chopped
7 cloves garlic, minced
1 green bell pepper, chopped
2 15.5-ounce cans great Northern beans, rinsed and drained
1 32-ounce container chicken broth
1 4-ounce can chopped green chiles
1 fresh jalapeño, minced with seeds removed
1 teaspoon salt
1 teaspoon ground white pepper
1 tablespoon ground cumin
1 tablespoon chili powder
1 teaspoon cayenne pepper

What to Do:
Preheat oven to 375 F. Place chicken in a roasting pan and drizzle with olive oil. Season generously inside and out with salt and pepper. Roast uncovered until internal temperature reaches 165 F, about 1 hour and 15 minutes. Let cool, shred meat into chunks, and set aside. Alternatively, cook 3 lb. seasoned chicken breasts or thighs in the oven or in a pan and shred.

Heat 2 tablespoons olive oil in a large saucepan or pot over medium heat. Add onion, bell pepper, and garlic and cook a few minutes until onion begins to sweat.

Stir in shredded chicken, beans, chicken broth, green and jalapeño chiles, salt, cumin, white pepper, chili powder, and cayenne. Bring to a boil. Reduce heat and simmer until flavors have melded, about 30 minutes.

What you'll need::
• 3 tbsp olive or avocado oil
• 1 tsp pink salt
• 1 container of mirepoix (chopped onion, carrot and celery)
• 3 cloves garlic, chopped
• 1 jalapeno, seeded and chopped (optional)
• 2 red bell peppers, chopped
• 1 pound ground turkey/beef/chicken (you can also sub in crumbled tofu)
• 1 tbsp chili powder
• 1 tsp cayenne pepper (optional)
• 1 tsp cumin powder
• 2 cups chicken or vegetable stock
• 1 large can of diced tomatoes (28 oz)
• 2-3 cans of beans (Black, pinto, kidney, refried or aduki beans are great choices.)

What you'll do::
In a large pot, add in the first six ingredients and sauté over medium heat until the onions and peppers have a chance to sweat and soften, about 5-7 minutes.

Add in meat of choice or tofu. Stir around and crumble using a wooden spoon until all the meat is mostly cooked.

Add in chili powder, cayenne (if using) and cumin. Stir ingredients around in the pot to prevent burning.

Add in stock, diced tomatoes and beans. If you are adding in extra chopped veggies, add them in now as well. Mix to combine.

Let simmer for about 40 minutes.

Fill your bowl with whatever toppings you’d like and enjoy!
