What You\u2019ll Need:<\/strong><\/span><\/p>

2\u20133 russet potatoes, peeled & grated
1 bunch scallions, thinly sliced
1 bunch fresh dill, finely chopped
3 eggs
1 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons sour cream
2 ounces salmon roe
Avocado oil or any neutral oil<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

\n\t\t\t\t\t\t\t\t\t

What To Do:<\/strong><\/span><\/p>

Squeeze out as much liquid as you can from the grated potatoes and place the drained grated potatoes into a bowl. Add the scallions, dill, eggs, salt, and pepper and mix well.<\/p>

Heat 3 tablespoons of oil in a 10-inch nonstick skillet over medium heat. Once the oil is hot, add all of the latke mixture and use a spatula to smooth out the surface and edges, shaping the mixture into a disk. Cook until the bottom is golden brown, about 8-10 minutes.<\/p>

Place a large plate over the pan and carefully flip the latke onto the plate. Slide the
latke back into the pan, to cook the second side. Continue cooking until the latke is golden brown all over, about 8 to 10 more minutes. Slide the latke onto a serving plate.<\/p>
