Though the skin can easily be removed once fish is fully cooked, we suggest keeping it on: It maximizes the flavor as it\u00a0protects the flesh while the bones help keep it moist. When grilling, the key is to keep the skin from sticking to the grill\u00a0too much. With a little patience and gentle maneuvering, we can ensure your fish will come off the grill in one piece.<\/p>\n<p><span style=\"font-family: circular-bold; font-size: 28px;\">For the Grilled Fish<\/span><\/p>\n<p><span style=\"font-family: circular-medium;\"><strong>What You&#8217;ll Need:<\/strong><\/span><br \/>\n1 1\/2- to 2-pound\u00a0whole fish like dorade<br \/>\nOlive oil<br \/>\nSalt and pepper<\/p>\n<p><span style=\"font-family: circular-medium;\"><strong>What to Do:<\/strong><\/span><br \/>\n1. Start with a fresh whole fish of your preference. We used <a href=\"https:\/\/www.freshdirect.com\/meat_seafood\/sea\/sc\/fwhl\/p\/sea_pid_3600946\">dorade<\/a>, sourced from Greece and beloved for its tender white meat.<\/p>\n<p>2. Rinse the whole fish inside and out, and pat dry. Wrap in a paper towel to absorb any moisture\u2014this helps to avoid sticking and bubbling of the skin.<\/p>\n<p>3. Brush the grill surface thoroughly to ensure it is absolutely clean.\u00a0Heat a grill over medium-high heat.<\/p>\n<p>4. Lightly season the grill surface with an oiled towel.<\/p>\n<p>5. Rub\u00a0the fish with a light coat of extra virgin olive oil.\u00a0Season well with sea salt and freshly ground black pepper.<\/p>\n<p>6. Place the whole fish on the\u00a0grill and cook\u00a0for 7\u201310 minutes.\u00a0When the skin is cooked, it will \u201crelease\u201d from the grill. To check to see if it&#8217;s ready, try lifting the tail. If it releases, it\u2019s ready to flip. If it still sticks to the grill, allow another minute before trying\u00a0again.<\/p>\n<p>7. When the fish is ready to flip, use a large spoon or spatula to gently turn the fish on to the other side. Cook for another 5\u20137 minutes.<\/p>\n<p>8. Pair your grilled whole fish with a side salad of fennel and oranges, and top with freshly made salsa verde:<\/p>\n<p><strong><span style=\"font-family: circular-bold; font-size: 28px;\">Fennel Orange Salad<\/span><\/strong><\/p>\n<p><strong><span style=\"font-family: circular-medium;\">What You&#8217;ll Need:<\/span><\/strong><br \/>\n2 round fennel bulbs<br \/>\n1 orange<br \/>\nOlive oil<br \/>\nSalt and pepper<br \/>\nOptional: arugula<\/p>\n<p><span style=\"font-family: circular-medium;\"><strong>What to Do:<\/strong><\/span><br \/>\nTrim off green tops from fennel bulbs and slice into thin pieces.<\/p>\n<p>Peel\u00a0and segment the orange.<\/p>\n<p>Combine the fennel and orange slices, drizzle with olive oil, and add some extra orange juice from one\u00a0segment. Season with salt and pepper.<\/p>\n<p>For peppery notes, add in a handful of\u00a0arugula.<\/p>\n<p><strong><span style=\"font-family: circular-bold; font-size: 28px;\">Salsa Verde<\/span><\/strong><\/p>\n<p><strong><span style=\"font-family: circular-medium;\">What You&#8217;ll Need:<\/span><\/strong><br \/>\n4 ounces\u00a0basil<br \/>\n1 cup extra virgin olive oil<br \/>\n1\/2\u00a0ounce mint<br \/>\n1 ounce parsley<br \/>\n2 ounce\u00a0capers<\/p>\n<p><span style=\"font-family: circular-medium;\"><strong>What to Do:<\/strong><\/span><br \/>\nPlace basil, mint, parsley,\u00a0and capers in a blender or food processor.
