Melt 3 tablespoons of butter or Earth Balance in the microwave. Add the panko crumbs to the melted butter and stir until well-coated.<br \/>\nSpray the cups of 2 muffin tins with non-stick baking spray and scoop the Mac &amp; Cheese into cups. Pat down the Mac &amp; Cheese gently.<br \/>\nTop each mac muffin bite with buttery panko crumbs. Bake bites in the oven for 30 minutes or until the crumbs are golden brown and crispy.
