Chop the red potatoes, broccoli, and peppers into medium-sized pieces. Saut\u00e9 potatoes first for about 5 minutes, then add red peppers and broccoli. Combine all of the seasonings and cook until veggies are tender. Preheat a non-stick or seasoned cast iron skillet over medium-high heat with 1 tsp. of olive oil. Add sausages to the heated skillet and cook, turning occasionally until browned. Add veggies and mix together. Remove from heat and top with freshly grated parmesan cheese.
