Spicy Masala Turkey Steaks<br \/>\n1 tbsp extra virgin olive oil<br \/>\n2 garlic cloves, minced<br \/>\n2 tsp ginger, minced<br \/>\n4 scallions, diced into inch pieces (white parts only\u2013reserve the green parts for garnish)<br \/>\n1 red bell pepper, quartered, seeded and sliced<br \/>\n\u00bd tsp sea salt<br \/>\n1 tbsp Thai green curry paste<br \/>\nOne (12-14oz) can coconut milk<br \/>\n1 lb green and yellow squash noodles<br \/>\n4 oz sugar snap or snow peas, halved<br \/>\nFresh cilantro, torn into smaller pieces<\/p>\n<p><strong>What To Do<\/strong><br \/>\nCook turkey according to package instructions and remove from heat and transfer to a plate. Heat 1 tbsp olive oil to a medium pot with 2 minced garlic cloves, 2 tsp minced ginger, 3 diced scallions, 1 sliced red pepper, and a pinch of salt, then cook for 2 minutes until fragrant. Remove pan from the heat and stir-in 1 tbsp curry paste and 6 ounces of coconut milk and stir into the pan until well mixed and return to the heat to cook for about 2 minutes. Add package of zoodles and snap peas and increase heat to high and simmer for about 4 minutes.
