Pat the chicken dry and coat with olive oil. Season the entire chicken with salt and pepper, both inside and outside. Place on a roasting pan and roast until golden brown with an internal temperature of 165\u00b0F, about 40 to 60 minutes. Remove from the oven and set aside to rest for 15 minutes, loosely covering with foil.<\/p>\n<p>While the chicken rests, wedge the lemons; discard the seeds. Pick the parsley leaves off the stems; discard the stems and roughly chop the leaves.
