Gluten-Free Snickerdoodles<\/h1>\n

Makes about 25 Cookies<\/em><\/p>\n

What You’ll Need:<\/h3>\n

1\/2 cup grass-fed butter, softened
\n1 1\/4 cups coconut sugar<\/a>, divided
\n1 egg
\n1\/2 tablespoon vanilla extract
\n2 cups all-purpose almond flour <\/a>
\n2 tablespoons gluten-free flour<\/a>
\n1\/4 teaspoon baking soda
\n1\/2 teaspoon kosher salt
\n1 tablespoon cinnamon<\/p>\n

What to Do:<\/h3>\n

Preheat oven to 350 F.<\/p>\n

In a small bowl, mix together butter and 1 cup coconut sugar until well-combined and pale in color. Mix in egg & vanilla. Stir in almond flour, gluten-free flour, baking soda and salt until combined.<\/p>\n

Using a tablespoon scoop, roll dough into balls and set aside.<\/p>\n

In a small bowl, combine cinnamon and remaining coconut sugar. Roll each dough ball in the mixture and place on a baking sheet about 2 inches apart.<\/p>\n

Bake until edges are golden, about 10 minutes.<\/p>\n
