What You\u2019ll Need:<\/strong><\/span><\/p>

8 oz rustic, hearty bread
<\/span>Salt
Extra-virgin olive oil
2 lb leafy greens, like kale or spinach
12 oz roughly-chopped bacon
1 small bunch radishes, quartered, or other root vegetable
1 bulb fennel, sliced (or substitute other crisp vegetable)
12 scallions, thinly sliced
10 cloves garlic, sliced
Chili flakes or sliced jalape\u00f1o, to taste
2 c heavy cream
2 oz grated Parmesan cheese, plus more for sprinkling over
6 eggs<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

What To Do:<\/strong><\/span><\/p>

Preheat oven to 400 F. Tear bread into small chunks and toss with enough salt and olive oil to lightly coat. Spread out inside a large baking dish and toast in the oven until crisp, 18\u201322 minutes.<\/p>

Meanwhile, bring a large pot of water to a boil and add leafy greens. Blanch until just barely wilted and tender, then drain and roughly chop.<\/p>

Add chopped bacon to the pot and place over medium heat. Cook until lightly crisped, then transfer to a paper towel to drain. Leave a slick of grease in the pot, pouring off any excess.<\/p>

Return pot to medium heat and add radishes and fennel. Cook, tossing occasionally, until lightly browned, 5\u20136 minutes. Toss in scallions, garlic, and chili. Cook until fragrant, 2\u20133 minutes. Stir in reserved bacon and kale, the add the cream and 2 oz Parmesan.<\/p>

Spoon mixture over the toasted bread in the baking dish distributing evenly. Make six wells in the mixture, then crack an egg into each. Return dish to oven and bake until eggs reach desired doneness, 13\u201317 minutes. Sprinkle with more Parmesan immediately after removing from oven.
