Season beef  all over with salt and pepper. Place in pot and cook, turning, until browned all over. <br><br>Pour beer, chipotle pepper, and adobo sauce into pot. Bring to a boil, then reduce heat, cover pot tightly, and simmer gently until fork-tender, 3 1\/2 to 4 hours, turning halfway through (check on tenderness starting at 3 hours). <\/p>\n\n\n\n<p>Remove beef from pot and let cool slightly. Trim and discard any excess fat, then shred meat with two forks. Return beef to pot and stir into cooking liquid; warm through over medium heat.
