Strips and cubes of chicken, beef, or pork are great for stir-fries. These cuts of meat are small and uniformly sized, so they cook quickly and at the same rate. Coat strips or cubes with oil before stir-frying to prevent them from sticking together in the wok or skillet.
Boneless strips of chicken are excellent for stir-frying. For a textured crust like you might get in a Chinese restaurant, try coating small pieces of chicken with a little egg white and cornstarch before cooking.
