For the Colder Months - Easy Chicken Soup

This is our go-to Easy Chicken Soup, perfect for a chilly night. Over medium heat, sautée entire container of mirepoix (chopped onion/carrot/celery) in a large pot. Next, cut 1 pound of chicken into bite-sized pieces (roughly 1-inch cubes) and add to pot. Add more or less chicken, depending on preferences. Once the chicken is cooked through, add 32 ounces of chicken stock, 2 bay leaves, and 1 cup of dried pasta and let simmer for about 10 minutes or until the pasta is cooked.
