Steak & Pesto Sweet Potatoes

Try this sweet and savory update on the classic steak-and-potatoes combo. For the sweet potatoes: Drizzle and toss ½-1 cup of sliced sweet potatoes with 3 tbsp olive oil. Roast fries on a baking sheet for 15 minutes at 375° until golden and you can easily pierce with a knife. Toss in a few tbsp of pesto (or chimichurri). For the steak: Salt and pepper then sear on all sides in a hot skillet with butter and thyme. Finish the steak on the stovetop or in the oven. Let the steak rest for a few minutes, and serve whole or sliced against the grain.
