Ricotta is a soft, domestic cheese made through cow's milk and has a sweet flavor. Whole milk is directly acidified with vinegar, then the cheese undergoes a slow cook process, allowing the curds to denature and coalesce at just the right temperature. Cream is then mixed with the curds and blended into a feathery homogenized fusion. Pasquale (Lino) Liuzzi came to this country over 45 years ago with the idea of establishing his own business producing premium quality cheeses and fine foods, reminiscent of those made by his family, in the small town of Noci in the Province of Bari, Italy. Today Liuzzi Cheese proudly carries on old world traditions of handcrafted cheeses started by the Liuzzi family five generations ago.
