Choose contrasting flavors and textures. Mix it up. Hard and soft, mild and strong. Set spicy Roquefort against creamy, milky Brie. There are no rules. Pick and choose from our many categories, and use our flavor and texture ratings as your guide.
Mix up the milks. Cow's-milk, sheep's-milk, and goat's-milk cheeses each have unique, distinctive flavors and aromas. Try the burnt-sugar sweetness of sheep's-milk cheeses with the farmy tanginess of chèvre. Compare and contrast.
Consider the season. In the warmth of spring and the heat of summer, choose simple, lighter cheeses like fresh chèvres and simple Bries. In the cool fall and icy winter, choose hardier, heavier, more strongly flavored cheeses, like Cheddar and Gruyère.
