Inniskillin Vidal Icewine Niagara Penninsula VQA

A uniquely Canadian sweet wine harvested at the height of Canada's crisp winter. Inniskillin is Canada's original estate winery and an Icewine pioneer. Made from Vidal grapes, whose thick skin is suitable for harvesting late in the season and natural acidity gives great structure to the lusciousness of its tropical aromas and flavors of mango and lychee. The grapes are naturally frozen on the vine and then picked when the temperature drops to a frigid 15°F. Only a few drops of concentrated nectar can be squeezed from each bunch. The juice is then slowly fermented to achieve a rich, specialty wine known as Icewine. Aromatics of tropical fruit, including mango and orange dominate, while on the palate an abundance of fruit flavors including peach, nectarine and citrus are balanced by crisp, bright acidity. Enjoy with blue veined cheese with dried fruit or fresh peaches or pears; roasted chicken with grilled peaches; fresh papaya and lime salsa with grilled white fish; or a traditional peach pie.
